Smokey pepper and fish stew

Ingredients – serves 3-4

1                    Red onion (finely chopped)

3                    Red peppers (sliced)

3 cloves        Garlic (finely chopped)

1                     Red chilli (finely chopped)

1 tbsp             Avocado oil or olive oil if you don't have

2 tsp              Smoked paprika

1 tsbp             Balsamic vinegar

1 carton          Passata

1 carton         Water (refill the passata carton)

1                     Courgette (sliced)

300g             Sustainable cod (or other chunky white fish) (chopped into chunks)

150g              Raw prawns

Sea salt and black pepper

 

Method

Sweat off the onions, peppers, garlic, and chilli in the avocado oil on a low heat with the lid on for 30mins.  

 

Add the paprika, passata, vinegar, water and courgette bring to the boil, simmer on a low heat for 1 hour with lid on. Season generously.

 

Add the fish, cook for approx. 5mins until cooked through.
