Superfoodie flu fighting soup

Nature is full of anti-bacterial and antiviral immune booster foods. This soup is an easy 5 min recipe to both warm you and fight of any lurgies. In particular it contains a warming broth with garlic, turmeric, ginger, shitake mushrooms and probiotics which all have sound immune boosting credentials. It also has massive whack of veg for antioxidants and vitamin C and edamame for protein. It will warm you from the inside out and help you keep fighting fit through the winter months. It can be vegan or flexitarian depending on your preference.

 

Ingredients

400ml           Boiling water

1 tbsp             Sweet white miso (2 if you don’t use bone broth)

1 frozen          Conc. bone broth capsule  - I used these https://www.lovetaste.co/pages/bone-broth

1 thumb          Ginger (finely sliced)

1 thumb          Turmeric (finely sliced)

1 clove            Garlic (finely sliced)

150g               Mixed fresh veg (I used broccoli, carrot, courgette)

50g                 Shitake mushroom (sliced)

100g frozen    Edamame

Few dashes     Tabasco or chili oil

Black pepper

Splash of         Sesame oil

 

Method

Place the water, miso, bone broth, ginger, garlic, turmeric and tabasco in to a sauce pan and bring to the boil.

 

Add the veg except for the edamame and boil for 4 mins, then add edamame for last minute.

 

Season with black pepper and sesame oil (these will both help the absorption of the turmeric’s beneficial polyphenols).  Serve.
