Cinnamon French toast with peanut nut butter and cherry

I need a dose of protein at breakfast otherwise I’m done for in the day – protein helps balance blood sugar, prevents cravings and makes you feel fuller for longer. That means that ‘sweet’ breakfast is a disaster for me. But sometimes you want a treat, in comes this tasty recipe. Actually it has no sugar at all, but definitely feels indulgent. Cinnamon is a great way to sweeten food with no actual sugar – it even helps manage your insulin levels. Its super quick and easy too, 5 mins max

 

Ingredients

1 slice    Wholegrain bread

1            Egg

½ tsp     Cinnamon

1 pinch  Seasalt

½ tbsp   Coconut oil

1 tbsp    Peanut butter – I used some with coconut too

50g       Frozen cherries

 

Method

Beat the egg with the cinnamon and salt, in a shallow bowl. Soak the bread on both sides until has absorbed the egg, if the is any left pour over the bread when in the fry pan.

 

Place the cherries in a pan with a splash of water. Bring to the boil for 2 mins.

 

Heat the fry pan with the coconut oil. Cook the French toast on each side from 2 mins on each side. Remove from the pan, spread with peanut butter and top with the cherries.
