Vegan Kale Caesar

This simple but delicious recipe is not only vegan but hides a protein punch that you would not expect. The dressing made from nutritional yeast and cahews really make it into a complete meal that will keep you going. Or it is perfect as a delicious side dish, part of a sumptious spread.


Ingredients – serves 1-2

100g    Kale

½         Avocado

1 juice of a lemon

3tbsp   Nutritional yeast

25g      Cashews

Black pepper and sea salt

1-2tbsp Water

½ tbsp Olive oil



Add a pinch of salt and ½ the juice of lemon to the kale. Massage into the kale for a few minutes and then set aside.


Apart from the avocado at the rest of the ingredients into the blender and blend until smooth. Peel, de-stone and chop up the avocado. Add both the dressing and the avocado to the kale and toss together. Season well with black pepper.
