Smokey black bean chilli
Ingredients - Serves 2
1 Onion (chopped)
2 Garlic cloves (finely chopped)
1/2 tbsp Olive oil
1 tin Black beans (drained and rinsed)
1 tin Chopped tomatoes
1 tin Water
1 tsp Smoked paprika
Pinch Chilli flakes
1 tsp Vegetable bouillon powder
2/3 Juice of lime
2 tbsp Sweetcorn (frozen, canned, fresh)
2 tbsp Coriander
Black pepper and sea salt
1. Sweat off the onions and garlic in the olive oil for 5mins or so.
2. Add the beans, smoked paprika, tomatoes, chilli flakes, bouillon powder and water. Bring to the boil and cook for 30 mins, stirring occasionally, adding a little water if it becomes too dry.
3. Then add the sweetcorn, lime juice and seasoning for a further 5 mins.
4. Lastly add and the stir through the coriander.Back to All Recipe Articles
